Mexican Campfire Brekkie

Cooking when you’re camping can feel like a constant rotation of slightly burnt sausages - one of which has inevitably been dropped - and eggy bread. That’s not a bad diet by any stretch, but sometimes it’s nice to mix it up a bit!

All of us at Wylde Valley are camping fans, and over the years we’ve perfected a few camping stove recipes. We’re not the types to keep the goods to ourselves, so we’re always happy to share!

This Mexican breakfast is perfect for slow mornings around the tent before heading off for a day of adventures. It kicks out a fair bit of spice, so if you’re a little less of a fan of the fire leave out some of the chilli or top it with some soured cream to cool it down.

Ingredients (serves 4)

1 onion
3 cloves of garlic
2 red peppers
2 fresh red chillis
Olive oil
3 small dried chillis
3 bay leaves
2 tins chopped tomatoes
2 tomatoes
4 eggs
Tortillas
Cheddar cheese

Method

  • Finely slice the onions, garlic, peppers, and chillis. Grate your cheese.

  • You need a big frying pan (that has a lid), put it on a high heat with a glug of olive oil.

  • Add the onions, garlic, peppers, fresh and dried chillis, and bay leaves as well as a pinch of sea salt flakes and freshly ground black pepper. Stir and cook for about 10 minutes, until softened and caramelised.

  • Pour in your tinned tomatoes, stir, and leave to simmer for a bit to reduce down. Until you get a nice thick consistency. Add some more salt and pepper if it needs it.

  • Slice your tomatoes and lay on top of the stew. Then make small wells in the sauce and crack your eggs into them. Do this bit quickly so the eggs all cook for about the same amount of time. Pop the lid on and cook for 3 to 4 minutes.

  • Warm your tortillas, either quickly in a clean frying pan or by wafting over the flame.

  • When the eggs are cooked (check this by giving them a gentle poke. You want the whites to be cooked but the yolks to stay runny - about six minutes take the pan off the heat.

  • Take to the table in the pan and get everybody to load a tortilla up with an egg, the tomato sauce and a good sprinkle of cheese. Whoever finds the dried chillis wins.
